Can you say, “Yummy in my Tummy!”? You will be saying that and a whole lot more when you try this one pot recipe for Spinach Artichoke Pasta. This is such a simple and delicious Meatless Monday or One-Pot Wonder meal, that the meat lovers in your home won’t even notice that they aren’t eating meat. Trust me! Russell loves this one every time I make it, and he never complains that there is no meat with this one.

Ingredients for Spinach Artichoke Pasta:
2 TBSP butter
2 cloves minced garlic
Pinch red pepper flakes
4 cups low-sodium chicken broth
2 cups half and half
1 pound spaghetti noodles broken into small pieces
1 tsp salt
½ tsp white pepper
8 ounces cream cheese
1 cup grated parmesan cheese
4 cups fresh spinach leaves (1 bag)
1 can artichokes, chopped

Directions for Spinach Artichoke Pasta:
In a large, deep skillet melt butter over medium heat.
Add garlic and red pepper flakes. Sautee for 30 seconds or until fragrant.
Add chicken broth, half and half, salt, pepper, and spaghetti to the skillet.
Bring to a boil, cover, then reduce to medium low.
Simmer pasta for 15-20 minutes, until pasta is tender, but not cooked through.
Stir in cream cheese and parmesan cheese until both are melted.
Add spinach and artichokes.
Cook until spinach is wilted.
Sauce will thicken as it cools.

NOTE: Grilled chicken can be added to this dish if your family absolutely must have meat.
