I don’t know about you, but I love the idea of “making once/cooking twice”. That’s why I love the idea of freezer friendly meals. If I am going to make dinner, why not make an extra meal for another night later on down the road when life gets busy? This Spicy Peach Chicken that cooks in the crockpot is perfect for make one now and save one for later. This sweet and slightly spicy meal is delicious and if you like Orange Chicken from your local Chinese Restaurant, you’ll love this recipe. (Even Russell likes this one, and he is not a fan of peaches.)

Ingredients for 2 people:
1 lb, boneless skinless chicken breasts (2 large or 4 small chicken breasts)
½ cup peach jam
1 large peach, peeled and cubed
2 TBSP soy sauce
1 inch, freshly grated ginger
4 cloves minced garlic
1 pinch red pepper flakes (use more if you want to amp up the spice)
30 minutes before finished cooking:
¼ cup water
2 tsp corn starch

Additional items for freezing Spicy Peach Chicken:
1-gallon sized freezer bag

To cook now:
Place all items EXCEPT FOR the water and corn starch into your crock pot.
Cook on low setting for 3 hours.
30 minutes before finished, make a slurry of water and corn starch, and add to crock pot to thicken sauce.
Perfect, served over Couscous with a side of Roasted Green Beans.

To Freeze Spicy Peach Chicken:
Label your freezer bag with the name of the recipe, cooking instructions and date freezer meal was created.
Add all ingredients EXCEPT FOR water and cornstarch to your freezer bag. Add those when you cook your meal.
Remove as much air as possible, seal, freeze and save for later.
