One Tray Meal – Serves 5
This is a great one tray meal of Sausage and Peppers that is SO SIMPLE to make any night of the week. It also works well as a make-ahead freezer meal when you place everything in a one-gallon freezer bag. I love it because it can cook in the oven while I am busy doing other things. Russell loves it because he can pick out the peppers. LOL!

INGREDIENTS:
1 package mild Italian Sausage links
yellow pepper, sliced into strips
red pepper, sliced into strips
green pepper, sliced into strips
orange pepper, sliced into strips
1 white or yellow onion, sliced into strips
2 TBSP olive oil
1 tsp garlic powder
½ tsp dried oregano

SAUSAGE AND PEPPERS DIRECTIONS:
Preheat oven to 400 degrees.
Line 9” x 13” sheet tray with foil.
In a bowl, mix all ingredients until evenly coated.
Bake uncovered stirring once mid-way through, for 60 minutes or until sausage reaches an internal temperature of 165 degrees.
Serve on Hoagie Rolls or over a bed of rice.
