I love an easy dinner where a lot of cooking isn’t involved, especially if I am just making dinner for myself on a night when Russell is away or has a meeting. One Tray Oven Nachos certainly fits the bill. It’s yummy. It’s easy. And best of all, it’s versatile.
MAIN INGREDIENTS FOR ONE TRAY OVEN NACHOS:
Tortilla Chips (Use a style that is a little heavier weight, so they don’t break as easily once you’ve loarded them up)
Freshly Grated Cheese (Pick your favorite. I like a mix of Pepper Jack and Extra Sharp Cheddar.)

TOPPING SUGGESTIONS:
Pick and choose your favorites. Use leftovers from the fridge. You make what you like.
- Grilled Chicken
- Ground Beef
- Carnitas
- Black Beans
- Red Beans
- Heated Refried Beans
- Corn
- Tomatoes
- Black Olives
- Scallions
- Jalapenos

TOPPING SUGGESTIONS FOR AFTER BAKING:
Again, pick and choose your favorites.
- Sour Cream
- Salsa
- Avocados
- Guacamole
- Lettuce

DIRECTIONS FOR ONE TRAY OVEN NACHOS:
- Preheat oven to 350 degrees
- Scatter chips on sheet tray in a single layer. (The best you can.)
- Sprinkle with cheese.
- Bake for 3 minutes.
- Turn sheet tray 180 degrees and bake for another 3 minutes until cheese is melted.
- Add additional toppings in a thin layer.
- Bake until heated through. (Time will vary depending on how many toppings you add.)
- Remove from oven.
- Sprinkle with additional “after baking toppings”.
- Serve and enjoy!
