One Tray Chicken Fajitas

A few weeks back I shared with you how I “theme” my meal planning.  Wednesday is typically One-Pan Wonder Wednesday.  It’s a dish made in just one pan.  Sometimes on a sheet pan.  Other times in the crockpot.  Occasionally in my cast iron skillet.  You get the idea.  It makes for easy dinner meals, with quick clean up. This week I am sharing with you a favorite of mine One Tray Chicken Fajitas for 2 reasons:  One – it is so easy to do, and two, because Russell hates peppers, and this dish allows us to have what we want without cooking separate meals.

One Pan Chicken Fajita Ingredients:

½ cup vegetable oil

1 package taco seasoning mix of your choice

1 ½ pound chicken breasts sliced into strips

3 sliced bell peppers, any color, but I prefer a variety

1 large red onion, sliced into ½” strips

¼ cup chopped cilantro, stems removed

1 lime, juiced

1 package of your favorite tortillas

Optional Toppings:

Sour cream

Shredded Cheese

Avocado or guacamole

Directions for One-Tray Chicken Fajitas:

Combine vegetable oil, and taco seasoning mix in a large resealable plastic bag. Add chicken strips, bell peppers, and onion; shake to mix.  Marinate chicken mixture in the refrigerator, 30 minutes to 8 hours.  (BONUS TIP:  Do this in the morning before going to work and it will be ready to go when you get home.)

Preheat oven to 400 degrees F (200 degrees C). Line a rimmed sheet pan with aluminum foil.

Spread chicken mixture onto prepared pan.  Occasionally, I will separate the onions, chicken and pepper, since Russell doesn’t like peppers, while other times I let him pick through.

Roast in the preheated oven, stirring halfway through, until chicken is no longer pink and bell peppers and onions soften, 15 to 20 minutes.

Sprinkle cilantro and pour lime juice over chicken mixture; toss to distribute.

Build your fajita in a tortilla and add your favorite toppings.  YUMMY!!!
