Lemon Zucchini Cake with a Twist – Makes 2 loaf pans

I love my garden and I love finding new recipes to create using the ingredients from my garden… especially zucchini!  One plant of zucchini always yields so many squash that by the end of the season I am about zucchini’d out.  Are you feeling my pain as the harvest season has begun? That’s why I love this recipe for Lemon Zucchini Cake.

Already this season, we’ve had roasted zucchini.  I’ve added shredded zucchini to spaghetti sauce, made Zucchini Pizza bites, made Zucchini Fritters, made Zucchini Bread, and I’ve shredded and frozen zucchini to have on hand mid-winter.

Well, this year, I discovered a new (to me) recipe for Lemon Zucchini Cake.  I found this recipe on a fellow blogger’s page, Mom on Time Out, written by Trish from Sacramento, and it is now a family favorite!  One of my favorite things about this recipe is that I can make 2 of these cakes when I use foil pans from the store and freeze one of the loaves for future use.  (Bake once.  Have twice!)

With a Twist

Now, I said this was Lemon Zucchini Cake with a Twist.  So, what’s the twist I created using Trish’s recipe?  I made mine gluten free by exchanging the 2 cups of cake flour with 2 cups of rice flour and I like to add ¾ cup of slivered almonds for some additional texture and crunch to the cake.  I also added zest from the lemon used to make the glaze for just one more taste of zing.  The lemon and zucchini are a perfect pairing and a great way to use up that zucchini from the garden!

SPECIAL NOTE:  Surprisingly enough, the rice flour still makes for a moist cake that holds together well.  (That’s one of my pet peeves of gluten free baked goods – crumbly, dry cake.  Yuck!)
