One Tray Jalapeno Lime Salmon with Baby Potatoes and Beans

Looking for a recipe that is company worthy, but with very little clean up?  I’ve got you covered.  It’s a One-Tray Jalapeno Lime Salmon with Roasted Potatoes and Green Beans.  Incredibly delicious, very easy to make, and even easier to clean up, especially when you line your tray with foil.  But be prepared for that little zing on your lips.  It’s oh, so worth it!

Jalapeno Lime Salmon with Baby Potatoes and Green Beans

Jalapeno Lime Salmon Ingredients:

4 pieces of salmon (5 – 7 oz each, skin on or off)

For the Marinade –

1 large lime – 1 1/2 tsp zest + 3 Tbsp lime juice

1 1/2 Tbsp honey

a jalapeno, finely minced

3 green onions thinly sliced

1 Tbsp soy sauce 

2 garlic cloves, minced

For the Potatoes –

14 oz baby potatoes, halved

1 1/2 Tbsp olive oil

1/8 tsp salt

1 garlic clove, minced

For the Green Beans –

8 oz fresh green beans, trimmed

1 tsp olive oil

For Garnish –

lime wedges

Roasting Potatoes

Instructions

Preheat oven to 350 degrees and place a large, rimmed baking tray in the oven to pre-heat.

Toss the Roasted Potato ingredients in a bowl to cover potatoes. Remove the tray from the oven and pour the potatoes onto the tray. Place in the oven and roast for 20 minutes.

Combine the Marinade ingredients in a Ziplock bag. Add the salmon and set aside to marinate for 20 minutes (while the potatoes are roasting).

Combine the Green Bean ingredients into the bowl you used for the potatoes so residual oil and garlic sticks to beans. Toss.

Remove salmon from the Marinade. Set Marinade aside.

Remove tray from the oven. Move the potatoes to one side and place the salmon in the middle, skin side down. Pile green beans in a pile on the tray.  Don’t spread them out, they will overcook.

Sprinkle the entire contents of the tray with salt and pepper.

Drizzle half the Marinade over the salmon, then place the tray into the oven and bake for 4 minutes per 1/2 inch of thickness (Measure the thickest part of the salmon).

Turn the broiler on to maximum temperature.

Drizzle the remaining Marinade over the salmon and grill for 2 minutes or until lightly golden brown on top.

Squeeze lime wedge over the top of the salmon before serving.
