Chicken Mushroom Barley (Serves 5-6)

This is a delicious and hearty one dish meal that is perfect for those chilly Fall evenings and in my home, it is a family favorite.  My kids loved this one growing up, and so did I because this Chicken Mushroom Barley dish is not only easy to make but the clean up is super simple, as well. Serve it with a side salad and it is a complete meal.  The leftovers aren’t bad either.  LOL!

Chicken Mushroom Barley Ingredients
Ingredients for Chicken Mushroom Barley


8 ounces sliced mushrooms

1/2 onion, finely chopped

2 TBSP butter

1 ½ cup pearl barley

3 ½ cups chicken broth

1 ½ pounds boneless, skinless chicken breasts

Salt and Pepper to taste

To make Chicken Mushroom Barley:

Spray 9” x 13” pan with cooking spray.

Mix barley, onion and mushrooms in pan.

Dot with butter.

Lay chicken breasts on top.

Pour broth over the top.

Sprinkle with salt and pepper.

Cover with foil and bake @ 375 degrees until barley is tender and the chicken is cooked through, about 1 ¼ hours.
